Alright, I haven't screwed around with water out of fear, but I have an idea.

Alright, I embarked into a valley of sorts that takes up the center of the map. Up and out of the valley there is a river, From what I understand rivers are infinited sources. So if I block off the end of the valley, and divert the river. Could I theoretically create an artificial lake?

yes, however, the water will never raise higher than the source blocks and your area will not start to attract lake creatures. However, you could make most of the area fill up with water and have a fort-in-a-lake

Alright, Two more questions.
1. Is it possible to build a dam more than 1 block high?
2. If something were to say, Die, In the water would it pollute everything?

for a deep river... I wouldn't know how to handle that. I do know that blood from a corpse might possibly polute a whole river, but if they simply drown without wounds, they will not polute the river.

I was speaking more of damming the valley, So the water won't just flood out the open end. It is a two z high valley, and I would like to have the base on the upper level.

Yeah, just build the lower set of walls first then build on top of that.
