I only plan in terms of efficiency and where things will be. I generally try to just cut paths as short as possible without considerations for symmetry or beauty. The only thing I make that's symmetrical or beautiful is stuff I build above ground.

Building stuff above ground is very important for me though, don't know why but I always have to have nearly half my fortress doing it.
