I like chalk the best out of all stone, i made a complete chalk abovegroud fortress. It was then destroyed by a small goblin group because i had no good military. Just a badly threw together random people one....But at least i found out i had 3 vampires, one being my Mayor! :)

Kaolinite and bauxite look better though.

Also, I love using olivine and rutile, if I have them.

Petrified wood only shows up in tiny amounts though, so you can't really use it as well.

I love rutile, I try to embark with it and some realgar or petrified wood!

Why couldn't my vampire Hammerer eat someone useless, like a migrant? Instead, she went after my only gemcutter.. but sadly there were no witnesses, so I convicted someone's pet duck as the murderer.  It got off easy, with no beatings or jail time.  >.<

Personally I like to make columns of the stuff at my main gate to my depot. I display goblins I didn't pitch off the top  of my above ground edifice on said columns as a reminder to all who enter.

I also favor the giant middle finger that is petrified wood to the elves.

Personally I think it should be a gem, I had a few pieces of polished petrified wood and it is pleasing to the eye.
