I just finished my first ambush from about 7 goblins and I lost three dwarves.  How do I make sure that my dwarves pick up all the armor clothes and weapons from my dead dwarves and the dead goblin and bring them back to be used?

You can use [d]->[b]->[c] to mass-claim the items.
Them make armor/weapon stockpiles to ensure your dwarves bring the stuff inside.

Armor of dwarfs should be picked up automatically. If you want to pick up the goblinite, you'll have to reclaim it. Use d b c and select the items you want to reclaim.

Also, make sure you have an according stockpile, else they won't pick it up (but use it if assigned to the military, they'll just have to run out of your fort half naked to get it).
