I have two favorites:

The first is for cliffside fortresses. You always find sheer cliffs when a mountain biome is adjacent to a lake. Of course, I also try to get a forest square in there so I have access to wood and topsoil.

The second is for my moated castles. I do these on plains.

Flux, iron ore of some sort, no aquifer, nice tall mountains a plus but not required.

I also like scenic waters, like lakes and oceans, but it's usually impossible to get those without an aquifer (for some reason ).

Surface running water is sometimes interesting, but what with guaranteed underground water its not as important as it used to be. I DO really like wide rivers with huge waterfalls, though.
